Drying Pitayas
Wire rack is placed on top of tray. The height between the tray and rack should be about 1 inch so heat will circulate
Slice the pitaya in 1/4 inch widths. Can do with the skin on or peeled
Pitaya slices in oven. Cook at 200 degrees F. for about 15 hours or overnight. Do not turn fruit.
Dried pitaya will taste sweeter than the fresh fruit. This is because most of the water has evaporated.
